Here’s a simple recipe for mandazi, a popular East African snack:

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cardamom (optional)
  • 1/4 cup unsalted butter, melted
  • 1/2 cup warm milk
  • Oil for frying

Instructions:

  1. In a large bowl, mix together the flour, sugar, baking powder, salt, and ground cardamom (if using).
  2. Create a well in the center of the dry ingredients and pour in the melted butter and warm milk.
  3. Stir the mixture until a soft dough forms. If the dough is too dry, add a little more milk; if it’s too sticky, add a bit more flour. Knead the dough gently until it becomes smooth and elastic.
  4. Cover the dough with a clean kitchen towel and let it rest for about 30 minutes to allow it to rise slightly.
  5. Heat oil in a deep pan or pot for frying. The oil should be approximately 2 inches deep.
  6. On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch. Cut the dough into desired shapes, such as triangles or squares.
  7. Carefully place a few pieces of mandazi into the hot oil, making sure not to overcrowd the pan. Fry them until golden brown on both sides, turning them once during cooking.
  8. Remove the cooked mandazi from the oil and transfer them to a paper towel-lined plate to drain excess oil.
  9. Repeat the frying process with the remaining dough.
  10. Allow the mandazi to cool slightly before serving. They can be enjoyed warm or at room temperature.
